EGGNOG PANCAKES WITH CRANBERRY SAUCE
2 cups pancake mix 1 egg 1 1/2 cups eggnog 1 1/2 teaspoons vanilla extract pinch ground nutmeg 1 can cranberry sauce (15 oz)
Place pancake mix in a bowl. In a another bowl, whisk egg, eggnog, vanilla and nutmeg; stir into pancake mix just until moistened. Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with cranberry sauce. _________________________________________________________________ HOLIDAY MASHED POTATOES

1 gallon apple cider 8 cinnamon sticks 1 lemon and 1 orange, washed and sliced 1 T whole cloves 1 T allspice 1 gallon white wine 2 c rum
Simmer the nonalcoholic ingredients together for 1-2 hours, then add the wine and rum about 10 minutes before serving (hot).
I tested this recipe by dividing all the above quantities by 5, to approximately scale to a 750ml bottle of white wine. The scaled-down recipe I used fit well in my crock pot. |
